I came up with this recipe when a friend of mine said they could not stand the taste of beetroot. The mix of beetroot and mint compliment each other so well and lower the earthy tones. Beetroots are packed with essential nutrients, beetroots are a great source of fibre, folate (vitamin B9), manganese, potassium, iron, and vitamin C.
Serves 2 Preparation 5 minutes
Chop 75g/3oz Swiss chard into slices, place in a blender with 100g/ or 1 small beetroot peeled and cut into quarters, 200g/7oz fresh pineapple cut into chunks, 5 mint leaves, 200ml coconut water and 1 tsp maple syrup.
