Frittata

Eggs are a powerful source of protein with Broccoli is an excellent source of vitamin K, vitamin C, chromium and folate. It is a very good source of dietary fibre, pantothenic acid, vitamin B6, vitamin E, manganese, phosphorus, choline, vitamin B1, vitamin A (in the form of carotenoids), potassium and copper.

Serves 4                     Preparation Time 10 minutes Cooking Time 10 minutes

215g/7.5oz potatoes – boil and slice

6 eggs

1 tbsp. olive oil

45g/1.5oz broccoli split into bite size pieces

20g/0.7oz spring onions diced

45g/1.5oz cherry tomatoes’ quartered

Method

  1. Heat on a low-medium heat 1tbsp olive oil in a frying pan. Cook potatoes until brown on both side. Add rest of vegetables and cook for 3 minutes
  2. Poor over whisked egg – cook for 5minutes
  3. Finish off under the grill until all egg cooked through and serve
